Ever heard of crunchy salsa? It’s a Spanish flavor bomb known as Pericana. But it seems to me that it just might be the original chili crisp… and it’s from a small part of Alicante Spain.

With so many viral recipes and stories about chili crisp lately, I want to give credit to this regional Spanish specialty. It’s one of the craziest condiments I’ve learned about while living here. It is a super easy, very regional Spanish side dish that packs a tasty wallop of umami to use on fish and vegetables!
