What a lovely vibrant food filled newsletter. Love the recipes this week and am making that white bean salad minus the spicy ingredient. I don’t do chilli or anything hot spiced. Thank you for a yummy summery desert. I will try that in a few months time with fresh yummy peaches from our Goulburn region. Thank you Caroline.

Hope you’re feeling better this week, Jo, and glad that you are enjoying the newsletter. I hope that it takes your mind off medical stuff for a few minutes and gives you a chance to have fun in the kitchen! XO C

Oh a few things going on with my body I need to wrap my head around. I do have control of what goes into my body food wise not so much medication wise. So your newsletters are very inspiring and I just sometimes make them exactly or I use them as a base guide and use what’s available to me. I love eating this way. My drs are busy tweaking my meds to get my body working more efficiently as I’m still on suppression therapy for another 5 years for my thyCa sadly. It’s having some systematic issues on some of my body so have to go through some testing and add in some new medications to get my bp and blood stabilised. I have too many red blood cells so am clotting and my bp is a bit skewed, diastolic showing no resting phase or not much of one. I’m still alive and that’s great it’s just I need to get a few things tweaked to get my body working better and safer. My immune system is a little flat after the virus I had and my vitamin D is very low. I’m packing up haha. So food is currently the thing I can control and that will help with all the other..I am not allowed to have added salt at the moment so herbs are my go too for flavour. So yes thank you for your help with great food with lots of flavour and vibrant colours.
