The Mediterranean diet is built around very humble ingredients celebrated for their flavor without much fuss. It’s the way I like to cook and eat. I’m guessing you might feel the same way too.


Home cooks here in Spain know exactly how to make the most of the inherent qualities of simple, inexpensive foods. People don’t try to disguise an inexpensive cut of fish, they turn it into a healthy fish stew to die for. They don’t seek out pricey hunks of beef for protein. They take a jar of protein-packed white beans, a bunch of parsley and some pantry essentials to create a centerpiece for any lunch or dinner. Which is exactly what we’re doing today.



I first discovered this recipe from the staff at Yotam Ottolenghi’s test kitchen with their first book in a behind-the-scenes series, Shelf Love. I proceeded to take matters into my own hands and make a few tweaks here and there. One of the things I love about this series is that they encourage personalization of their recipes as much as I encourage you to play with mine.
