The genius of the tagine pot is that it's conical-shaped cover continually returns moisture to the dish, basting it with the wonderful Mediterranean flavors of the classic Moroccan seasoning in this recipe. Deep, warm tones from the dry spices, floral hints from the saffron & fennel and little bits of sweetness from the prunes & apricots.
But if your kitchen is equipped with a Dutch oven or a slow cooker, this recipe will work just as well as long as you baste the dish from time to time as it comes together over a medium-low heat.
