I have Christian Reynoso of the New York Times to thank for the inspiration on this fabulous one-pot, stovetop-to-table healthy, cozy pasta dinner. My favorite things to make a full meal of it is to add a big green salad, a bowl of the best winter tomatoes you can find (like the Spanish Raf that are ripe in December), a small bowl of olives on the side and a hunk of crispy rustic whole grain baguette.
