a perfect shape shifter in the kitchen
Cauliflower is such a shape shifter. One pan of roasted cauliflower florets, spiced and lightly dressed in extra virgin olive oil will yield more than this colorful salad really needs. If you have some left over, whirl it into a dip for an evening snack, or if it’s a really big head, you might have enough to add to a creamy soup.
The yogurt tahini dressing is purely optional, but I’d suggest you give it a try!
