all the flavors of Med in one big bowl
Farro, bell peppers, pomegranate seeds, red onion, pistachios, and a generous handful of fresh parsley, all brought together with a dressing built on pomegranate molasses, lemon juice, and olive oil.
It’s bright and toothy and colorful, the kind of salad that makes you want to make a double batch just so you have it for the rest of the week. Which, for the record, is exactly what I recommend doing.
