I first found a version of this recipe in Stanley Tucci’s cookbook long ago. Over the years, I’ve tweaked it to accommodate what I have on hand, but the theme is the same: stretching a small amount of deeply flavored meat to feed a table of friends.
It is the quintessential way that the Mediterranean population enjoys meat - for flavor - not big hunks of protein. Just remember: small amounts, not too often!
