Holidays are complicated. Schedules are turned upside down, calendars fill up with more events than you ever planned for, to-do lists grow as long as your arm. And you start looking forward to a simpler quiet January. Or at least a healthy break from overindulging in butter-ladened platters of holiday fare.
But you don’t have to wait a month for a respite. And you sure don’t have to wait until January 1st to hit the reset button if you started on healthy plans in 2025 and didn’t quite get there.
This week’s Healthy Menu Meal Plan features a risotto that’s missing two things. No time spent stirring the rice for an hour over a hot stove. No meat to get that rich, savory, umami depth of flavor. Just an oven-proof pan and a pile of mushrooms to provide that plant-based healthy flavor substitute. A rich dish from a handful of affordable ingredients.

That baked risotto sounds wonderful, I love mushrooms. We don’t do all that holiday get together here in my household as we don’t have a lot of time and quite frankly don’t have that kind of circle where it’s done. It’s almost harvest time and it’s also hay making season so it’s busy, just not busy how it is for you. We celebrate Christmas Day in our house and that’s pretty much it.
