The holiday season in Spain is remarkably long. Just when you think you’re in the clear on New Year’s Day, you’re not. There’s one more week of holiday merriment until the Three Wise Men arrive on January 6.
So you have 7 more days of partying left to manage and that’s where this simple-to-make, handful-of-ingredients, 15-minute healthy dish comes in handy.
It’s pretty enough and tasty enough to serve for lunch (which is my preference) or dinner. It’s infinitely accommodating to what you have in the pantry or the fridge.
No feta? No problem. Substitute some other crumbling cheese or pistachios. No chicken? No problem. Substitute another lean white meat or fish. Big or small cucumbers, no matter. I wouldn’t say the pomegranate arils are a “must have”, you could get away without them although I wouldn’t.
But one fun aspect to shopping for the right ingredients is that maybe you’ll come along a pop-up street vendor roasting fresh chestnuts like I did yesterday. It was my inspiration to suggest that some roasted chestnuts and a clementine would make a perfect midday snack.
