Hands down, salmon is my favorite fish to enjoy while following the Mediterranean diet. It’s accessible. It’s versatile. And whether baked, broiled, sautéed or air-fried, it’s a great source of all-important omega-3 fatty acids. A healthy fat that’s important to include in your overall diet plans if you’re looking to support your heart health and reduce inflammation.
But I’ve heard from lots of you that the Mediterranean diet guideline of eating 2-3 servings of fish per week can be a real challenge when you’re learning to eat the Mediterranean way every day. Even when the options are almost endless.
Now that fall and winter ingredients are starting to show up at the mercado, I’m featuring a recipe in today’s menu that I’ve loved for years. Seductively seasoned grilled salmon resting atop a delightful bed of succulent oranges, infused with anise-flavoring and topped with the vibrant crunch of pomegranate arils. A perfect flavor combination… and not a bad color wave on the plate too - if you’re into that sort of thing!
But vibrant color and incredible flavor aside, the most important value this recipe adds to your daily menu is to give you another opportunity to include fish in your weekly diet. Lovely recipes here Caroline for the fish and orange salad. Very vibrant. The recipe for home made almond butter yum. At least you would know what’s in it and no emulsifiers etc. Tips on cooking eggs are great. Just had to laugh though under the heading for the boiled eggs I think you forgot to change out the little write up, as it mentioned seeds and great for the freezer. Thanks for another newsletter filled with helpful tips, recipes and sparking my own ideas.
