Mediterranean diet, American-style
In the “fact v. fiction” category, one of the biggest misunderstandings about the Mediterranean diet is believing that you need special ingredients or special recipes to follow this diet. Nothing could be further from the truth. And this is especially true at breakfast.
A simple protein, a serving of fruit and a little whole grain fiber pretty much has you covered. But still, what to have for breakfast is still the number one question people have about this way of healthy eating.




So start thinking about slow-burning, protein-rich options that can keep you feeling full and energized until lunchtime. Eggs on whole grain toast, yogurt sprinkled with nuts and seeds, oatmeal with a drizzle of honey, a breakfast smoothie that packs in all sorts of fiber-rich fresh fruits and vegetables.
Or today’s featured recipe in the newsletter that uses the same savory ingredients from a typical Mediterranean frittata or a Spanish tortilla de Espańola and turns it into an sharable, portable, reheatable breakfast.
And if you batch cook these muffins like I did, you can enjoy them later in the week for a light lunch or dinner when they spend just 5-7 minutes in the oven or the air-fryer.
