I have no idea what took me so long to share one of my favorite recipes straight from the cradle of the Mediterranean diet, Greece.

Avgolemono, or Greek lemon chicken soup, has everything I cherish in a warm winter bowl… tender bits of chicken, big chunks of vegetables, little grains of starchy carbs - either rice or pasta - and LEMON, lots of lemon in a broth made creamy with egg yolks.

What’s so wonderful about making this soup the centerpiece of our menu today is that it’s also the perfect meal prep option for later in the week or later in the month. Paired with a simple salad, you’ll be ready for a hearty nutrient-dense Mediterranean diet lunch or dinner in minutes.

And speaking of meal prep, here’s a trick to keep in mind anytime you’re incorporating a grain or pasta into a soup or stew you plan to batch cook and freeze for later. Always, always add the pasta or grain when you are ready to thaw and enjoy. It will cook almost as fast as the reheat time and better yet, it’ll ensure a perfect al dente finish every time, not overcooked and mushy.

Since I’ve moved into full soup mode for the season, I’ve included a few extra recipe treats in the menu PDF besides the meal plan I promised you (mostly because I just can’t help myself), so that you don’t have to go hunting around for them.
