Beans and legumes are cornerstones of the Mediterranean diet. Whether you go all in and enjoy them every day, as many people do here in the Mediterranean region, or at least 3 times per week recommended by the guidelines, you are doing your body and brain a good thing.


And there’s such an enormous variety of healthful and affordable options, you’re bound to discover favorites. Your favorite bean for soups. Your favorite bean for salads. Your favorite bean for dips. Or go all in again for that classic combination: hot beany bean soup or cold beany bean salad!
But if you asked me what bean I’d want to have with me if I was stranded on a deserted island, it would be the big boastful butter bean (known to some of you as the lima bean).


In this week’s Healthy Menu Meal Plan, the featured recipe is an homage to that beautiful bean. It’s the centerpiece, not the side, of dinner. And it shows just how easy it is to start thinking about beans as a core source of protein in any meal. Not to mention all the other nutrient-packed goodness that beans and legumes provide to your healthy diet.
