Pork can be a wonderfully lean meat to enjoy while following the Mediterranean diet. And tenderloins are the perfect cut. Ask your butcher to trim the silver skin and fat to avoid one little prep step!

The National Pork Board has great information about cooking pork and another favorite of mine is the website, Serious Eats, where they describe just how I cook pork: sous vide. Visit both websites to learn more:

If you have the good fortune to own a sous vide machine, it is the PERFECT way to cook pork. Once done, it will be tender & juicy, cut like butter & taste like a dream! My perfect temp for this? 135°F/57°C.
