When you’re following the Mediterranean diet, it’s always handy to have a few meal prep “indispensables” in the fridge or the pantry. Those everyday recipes that you use every day.
Today’s Menu of the Day is anchored around one of my favorite indispensable recipes of all: a healthy chock-full-of-nuts granola laced with honey and olive oil from our farm (lucky us). If you want to drop by Alicante, we’ll be happy to share some of the spoils. If not, a second-best option is to just source your favorite honey and the mildest olive oil (like the Arbequina variety) that you can find in your own neighborhood!




Another big advantage of making your own granola is knowing exactly what’s in it (no hidden stuff from ultra-processed packages) and making a big batch to pop in the refrigerator for a few weeks or the freezer for a few months - if it lasts that long!
The mix of nuts and seeds to include is entirely up to you. I like as much variety as I can get so that every little bite is a little different. I just pull all the jars out of the pantry and start grabbing handfuls until I level up two cups.
When your stash is cooled and ready to store, pack it away as air-tight as you can. Gadget girl that I am, I use a clever little vacuum sealer system from Zwilling to store it in an air-tight container but a zip-lock bag will work if you do your best to remove the air before sealing it up too.
As always, you’ll find a few extra treats in the menu PDF besides the meal plan I promised you (mostly because I just can’t help myself). When I can, I’ll reach into the archive so that you don’t have to go hunting around.
And this week, I’ve included a few recipes for other “indispensables” that always find a way onto sandwiches, wraps or used for encouragement to enjoy a few more veggies during the day.
