I love my Mediterranean diet pantry and it gives me plenty of unconditional love in return. It’s always there when I need some inspiration. Digging through jillions of jars, cans, boxes and bags, it never lets me down. We don’t have a family pet, but maybe I should start thinking about the pantry as my version of “man’s” (swap with your preferred pronoun) best friend and give it a pet name?
Today’s featured main is a tasty example of what a few simple and budget-friendly pantry staples and your imagination can dream up to keep you on a very healthy track… and help you get in another serving of fish too.
Every month I include at least one easy recipe for fish or seafood to build your healthy repertoire and this week’s recipe is truly a Mediterranean diet pantry darling.
Canned products, especially fish and seafood, are a real source of national pride for Spain. Some of the best in the world are canned right here, so it’s been a real delight to fill my own pantry with boxes and boxes at the ready.
Of course, “man” (another swap) cannot live by pantry alone and this recipe can’t live without a little bit of healthy, fresh green stuff. So reach into the refrigerated pantry (aka the fridge) for a few other staples and let’s make a meal of it today.
