We’ve just finished the major holiday of the year in Alicante, Spain - a month-long affair with hours-long parades, thousands of band musicians and tens of thousands of costumed participants - culminating in the burning of over 100 sculptures in the city streets and a 5-night fireworks competition.
So if you ever plan to visit me, the Fogueres de San Joan festival is the time to watch this party-obsessed seaside city explode in color & noise.



So maybe that’s why I’ve been thinking about a few little fireworks of my own. Transforming the humble turkey burger with two flavor bombs: a mix of slow-roasted mushrooms and a kicky classic Mediterranean spice blend.









And to add to the festivities, this week’s Mediterranean diet meal plan is a little different than most because I’m including two new recipes, not one, in the free PDF. In addition to the featured main recipe, you’ll find another of my favorite “indispensables”, slowly roasted mixed mushrooms.
Diced into a scramble for breakfast, turned into a decadent pasta side dish, simply topping a salad or a sandwich, or, in this case, upping the ante in a burger.
I promise you will use this “meaty meatless” kitchen essential all summer long to get that meaty umami-packed flavor into just about any meal.
As always, you’ll find a few extra treats in the menu PDF besides the meal plan I promised you (mostly because I just can’t help myself). When I can, I’ll reach into the archive so that you don’t have to go hunting around.
