White fish, cod or halibut, provides a tender blank canvas for many Mediterranean dishes, whether paired with a deeply flavorful saucy option like this one or simply pan-seared and topped with pesto.
But do yourself a favor and dress it up with this divine tomato condiment. In fact, I make twice as much sauce as I need and before adding the fish, I scoop out half and save it for a light pasta dish the next day. Meal prep magic!
