Salmon is such an easy fish to incorporate into your everyday diet. It bakes in minutes and plays nice with so many different flavors, from tomato-based sauces to this bright and cheery anise-flavored finish with fennel and pistachios.
The crunchy nut crust is a perfect juxtaposition to the tender, almost creamy salmon and the succulent bulbs. Just add a simple salad of mixed greens, a hunk of rustic baguette or a side of grains and lunch is all set!
