This looks really good. Since watermelons vary in size, do you have a general “guesstimation” of how many cups of the cubed melon you use? Growing up watermelon was practically its own food group at our house and I still love it. 😊
Great question, Linda, and one I had when writing up the recipe but decided to leave it loose. Clearly, I should have given some rough guidelines. I used ½ half watermelon for G and I and we ate the whole salad for a main meal. I think that would equal to 6-8 cups of cubed watermelon but I distinctly remember deciding to throw it all in at the end and we still had no trouble polishing it off!
