mojo rojo, a Canary Islands spicy salsa
This classic tapa combination of a mojo rojo recipe and the wrinkled potato (papas arrugadas) recipe with from Spain’s Canary Islands will make you feel like you’re on a tropical vacation.
The potatoes are creamy inside, wrinkly outside and so, so good. With this spicy red salsa, known in the islands as Mojo Rojo or Mojo Picón and Papas Arrugadas, you’ll make wrinkles disappear!
Today we’re going to make this classic salsa that always goes with those wrinkled potatoes in every café. I haven’t been able to figure out why salsas are called mojos in the Canary Islands but I do know there’s lots of different versions of these saucy side dishes sometimes they’re red and sometimes they’re green sometimes they’re spicy and sometimes they’re not.
