roasted mushrooms
This kitchen “indispensable” is, well, indispensable. When I find a nice big batch of mushrooms on sale, I always roast them and save one of two ways… straight into the fridge where they will last for 3-5 days or dehydrate them and grind into a powder to have on hand for any soup, stew, egg dish or any other recipe that benefits from a little umami.
When I roast with olive oil, they’ll keep in the fridge for 3-4 days to add to just about anything! Just spray, season and roast…
