White beans, aka cannellini beans, are a nutritional powerhouse on the Mediterranean diet. They’re packed with fiber and protein and a good source of numerous micronutrients, including folate, magnesium, and vitamin B6.

But when they are teamed up with tahini sauce, garlic, parsley, and a little bit of spice, it’s even more nutrient-dense. With this interpretation, I give a shout-out to the team at OTK and Yotam Ottolenghi. Their first book in the behind-the-scenes series, Shelf Love, gives me inspiration every day.
