Spices are one of my favorite ways to layer flavor upon flavor to any dish. They are part of the Mediterranean magic of being able to turn ordinary ingredients into extraordinary dishes and this week’s feature recipe is no exception. In today’s menu, we’ll transform a simple chicken and potato dish into one worthy of sharing with company, any day of the week. It’s an easy tasty way to end a healthy day.

But the star of the show, IMHO, is the sheet pan of sweet potatoes, roasted to a crunchy toasty finish and piled high on the plate. They are lusciously creamy and make a perfect meal prep side dish to enjoy for a few days this week in salads, mashed into a spread for sandwiches or a dip to snack on when you fill the sheet pan and make extra with no extra work.

Plus, there are all sorts of healthy reasons I’m such a fan of this healthy carb. These colorful tubers are rich in complex carbohydrates, so you get the advantage of a nutrient-dense side dish, loaded with vitamins and minerals, including vitamin A, vitamin C, and potassium. They contain antioxidants such as beta-carotene and anthocyanins that help with inflammatory-problems too.

In addition to these infinitely easy-to-prep potatoes, I wanted to create a menu for today that would be low on stress and high on flavor. Starting with a no-prep fruit and veggie-packed smoothie, a pre-prepped quinoa lunch bowl with an addictive and ever-useful lemon tahini dressing that stores in the fridge for up to 2 weeks, and finish with a dinner ready to enjoy tonight and make into a salad for tomorrow’s lunch when you pile the leftovers onto a big bed of fresh, crunchy greens and drizzle with some of the lemon tahini dressing.
