Today’s featured recipe in our menu of the day is a Greek-style shrimp scampi and one of my all-time favorite recipes. I serve it mid-week when I’m willing to spend 30 minutes to put a fabulous dinner on the table. I’ve served it to some last-minute company. I even served it for New Year’s Day brunch this year. It’s easy and tasty and a perfectly fool-proof one-pan way to prepare the most succulent shrimp you’ll ever have.

And it’s an easy “minimal cooking time” finish to an equally easy day filled with healthy fresh fruits and veggies, accompanied by a little meal prep.


There are two things about the Mediterranean diet I just love. First, I don’t need to make much of an effort every day to stay on track. I just need to make sure there are plenty of healthy ingredients in the fridge, the pantry, and (sometimes) the freezer.

Second, I don’t even need to keep track of just how many fruits and veggies I’m enjoying every day because as long as I’m getting in around 5 a day, I’m in good shape. The fact that today’s menu includes 9 well… the more the merrier.

And as far as cooking goes, today’s menu is definitely “light”. If you have the time to meal prep one big sheet pan of roasted mixed vegetables this weekend, make a double batch of quinoa and whip up a quick jar of tahini (or go the easy route and pick up some at your grocery), then any day you want to follow the menu this week will be a snap.
