White fish, especially cod or hake, is a favorite in Mediterranean kitchens. Dressing a fillet with classic Spanish ingredients from my hometown Valencian region like almonds, green olives, oranges & olive oil brings it that much closer to home.
I love to use green olives already stuffed with anchovies to add a bit more briny flavor and healthy nutrients to the versatile salsa! Thanks to America’s Test Kitchen for the inspiration.
