Caroline is not wrong in calling this Perfect Roast Chicken. I don’t think that I will cook a whole roast chicken any other way. And that sauce! Wow does it pack a flavor punch! The carcass went straight into my freezer to be used for my next batch of chicken stock. It’s going to be delicious!
