Caroline is not wrong in calling this Perfect Roast Chicken. I don’t think that I will cook a whole roast chicken any other way. And that sauce! Wow does it pack a flavor punch! The carcass went straight into my freezer to be used for my next batch of chicken stock. It’s going to be delicious!

Loved the chicken, lots of flavor and very moist. What soup recipe would you recommend to use the leftover sauce in?
